Welcome to our very first Cracker Barrel Lifestyle blog post! We are so excited to share our design ideas, countryside charm, and yummy recipes with you through our new blog. Cracker Barrel stands for hospitality, family, community, and most of all, Pleasing People ™.
We’ll start out with a shortcut recipe that’s sure to please any baker (especially if you’re baking with a little helper with a short attention span). The end product will please all your hungry little helpers… and pretty much anyone with a sweet tooth.
Pancake Mix Chocolate Chip Cookies
Ingredients
½ cup butter, softened
1 cup packed light or dark brown sugar, depending on your preference
1 teaspoon vanilla
1 egg
2 cups Cracker Barrel pancake mix
1 cup semisweet chocolate chips (6 oz)
½ c walnuts (opt)
½ c shredded coconut (opt)
Directions
- Heat oven to 350°F. In large bowl, beat butter and brown sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and egg. Add Cracker Barrel pancake mix; beat on low speed until combined. Stir in chocolate chips.
- For regular size cookies: Onto ungreased cookie sheets, or cookie sheets lined with parchment paper (not wax paper) drop dough by tablespoonfuls about 2 inches apart. Bake 8 to 10 minutes or until set on edges and golden brown. Cool on cookie sheets 2 minutes. Remove from cookie sheets to cooling racks.
- For big, chewy cookies use a 1/4 cup of dough for each cookie and arrange only six on a tray
